Grilled Paneer Bhurji Sandwich

Are you looking for a quick and delicious sandwich recipe for breakfast/lunch/dinner, then you are at the right place. When you make this sandwich with whole wheat bread, it tastes so  good. The protein and fiber from paneer and bread fills you up and is very healthy. It is kid friendly and easy to make. You can prepare the paneer bhurji the previous day and store it in the refrigerator. Ingredients:
  • Whole wheat bread – 8
  • Grated fresh paneer – 2 cups
  • Chopped onion – 1 cup
  • Chopped ginger – 1 tbsp
  • Tomato – 1
  • Green chili – 1 or 2 (adjust to taste)
  • Turmeric powder – 1/4 tsp
  • Salt to taste
  • Add chopped tomatoes and cook until it is fully mashed. Add turmeric powder, salt and cook for a couple of minutes. Add grated paneer and mix well. When it is mixed well with the rest of the ingredients, turn off the stove. Paneer bhurji is ready.
    Butter the grill. Place a big spoon full of paneer bhurji between two slices of bread and grill for a few minutes. Serve hot or wrap in an aluminum foil for lunch pack.

Aloo Poha (Batata Poha)

Aloo Poha or Batata Poha is a traditional Maharashtrian recipe made using flattened rice or Poha (aval) and potatoes. A simple and delicious recipe served for dinner or a healthy breakfast. It can also be made during Navaratri festival for serving your guests. You can use thin or thick poha for making this dish except that the soaking time varies.

Ingredients:
  • Poha (flattened rice or beaten rice) –  2 cups
  • Big potato – 1 (boiled, peeled and cubed)
  • Chopped onion – 1 cup
  • Green chilies – 3 to 4
  • A few curry leaves
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Urad dal – 1 tsp
  • Peanuts – 3 tbsp
  • Dried red chili – 1
  • Turmeric powder – 1/2 tsp
  • Oil – 3 tsp
  • Salt to taste
Method of Preparation:
Wash and soak poha in water for 3 minutes. Strain through a colander and let it rest for sometime.
Heat 1/2 tsp of oil and roast peanuts. Transfer it to a plate. Heat a tsp of oil in the same pan and add mustard seeds and cumin seeds. Let it splutter.
Add urad dal, green chilies and half of the curry leaves.
When urad dal becomes golden brown add onions and saute until it becomes translucent. Add boiled and cubed potatoes along with salt and turmeric powder. Mix well, cook for a couple of minutes and finally add poha. Mix everything well and transfer the contents to a bowl.
Roast dried chili and the remaining curry leaves in a tsp of oil and add it to the poha along with roasted peanuts.

Split Moong Dhal and Green Peas Dosa

Looking for some easy, tasty and new recipe???? This Split Moond Dal and Green Dosa is a healthy and tasty recipe which will taste like Pesarattu. But it is less time consuming and it is something different than a usual Dosa. Thanks to my cousin for this wonderful recipe.

Ingredients:
  • Split Moong Dhal – 1/2 cup
  • Green Peas ( I have used frozen) – 1/2 cup
  • Ginger (chopped) 2 tsp
  • Green chillies – 2
  • Salt – to taste
  • Oil – 6 to 8 tsp
For Seasoning:
  • Oil – 2 tsp
  • Cumin seeds – 1 tsp
  • Onions (finely chopped) – 1/4 cup
Method of Preparation:
  1. Soak the the split moong dal at least for half an hour.
  2. If your using fresh green peas, boil it until soft and keep it aside.
  3. If you are using frozen green peas just microwave it for 2 minutes and keep it aside.
  4. Now grind the moong dhal with green chillies and ginger until smooth.
  5. Now add the green peas and grind them to a smooth consistency.
  6. Heat oil in a pan and add the cumin seeds and onions.
  7. Fry till the onions become soft and add to the Moong Dhal and Green peas batter.
  8. Add required amount of salt and check if the batter is of regular Dosa batter consistency.
  9. Make round shape of around 6″ diameter and add a tsp of oil.
  10. When they turn golden brown turn the other side.
  11. Leave it for 2 minutes until it is done.
  12. Tasty green peas dosas are ready.
  13. Serve hot with Coconut chutney or Peanut chutney or even with Idly podi.
